This recipe for cherry cake with pudding is fruity and sophisticated: the flavor of the vanilla and the freshness of the cherries go together perfectly in terms of taste.

Cherry cake with pudding tastes sweet, juicy and fruity. Use fresh cherries or cherries from a jar – this way you are not dependent on the rather short cherry season in summer. Fortunately, the preparation is not complicated.

Allgäu cherry cake: ingredients

For 16 servings you will need:

500ml milk
1 packet vanilla pudding
2 tbsp sugar
250 g flour
185g butter
150 grams of sugar
1 egg
1 teaspoon Baking powder
2 packets of vanilla sugar
1 glass of sour cherries
5 tbsp cream
100 g slivers of almonds
2 tbsp breadcrumbs
butter for the mold
flour for rolling

Preparation: Allgäu cherry cake

Cook a pudding from milk, custard powder and sugar and let it cool down. It is best to fill the pudding in a bowl and cover it with cling film.
Quickly knead the flour with 125 g butter, 70 g sugar, the egg, the baking powder and the vanilla sugar and make a shortcrust pastry out of it. Wrap it in foil and let it rest for 30 minutes.
Drain the sour cherries. Grease the bottom of a springform pan (26 cm diameter) and place the rolled out shortcrust pastry on it. Raise an edge as you do so.
Sprinkle the breadcrumbs on the base, then put the cherries on top and spread the pudding over the base. Preheat the oven to 180°C (160°C for a fan oven).
Melt the remaining butter and stir in the remaining sugar, cream, and slivers of almonds. Pour the mixture onto the cake and bake in the oven for about 50 minutes.
