The Social Food Pumpkin Spice Latte Cheesecake

Ingredients

For the homemade “spice pumpkin” mix
-4 tablespoons of cinnamon
-2 1/2 teaspoons of powdered ginger
-2 teaspoons ground nutmeg
-1 teaspoon allspice
-1 teaspoon ground cloves

The base

-150 g of Speculoos biscuits
-75 g of melted butter
-1 pinch of pumpkin spice
For the “cheese”
-300 g of fresh cheese
-200g Greek yogurt
-100 gr of pumpkin puree (baby jar for the smart ones:)
-2 cases of pumpkin mix spice
-115 g of fine sugar
-2 sheets of gelatin
For the whipped cream
-200ml liquid cream
-50 g of sugar

-Liquid caramel

Preparation

Coarsely crush the biscuits, then add the cooled melted butter and the brown sugar. Mix well and spread at the bottom of a springform pan and leave to harden in a cool place. Soften the gelatin in a bowl with cold water. In a bowl, mix the cream cheese, yoghurt and sugar. Take the gelatin out of the cold water and after draining it, dilute it with a tablespoon of boiling water then add to the cheese mixture. Whisk everything well. Pour the mixture on the bottom of hardened biscuits and let set at least 4 hours in the fridge, overnight will be fine. Whip the whipped cream and place it on top of the cake, finally add the liquid caramel.
