Moroccan cuisine: the recipe for thousand hole pancakes

A great classic of Moroccan cuisine, this recipe for thousand-hole crepes is featured in Abdel Alaoui’s new cookbook.

An ode to the cuisine of “yemmas” (mothers in Morocco), Abdel Alaoui’s new cookbook compiles 100 Moroccan specialties. In the program? A chicken couscous with candied lemon, a cream of carrots with cumin or the famous recipe for thousand hole pancakes.

The recipe for Baghrirs or thousand-hole pancakes / Moroccan cuisine

For 6 persons
Preparation: 10 mins
ingredients:
-250 g of fine semolina
-250g of flour
-1 packet of baking powder
-10 g of dry baker’s yeast
-50 cl of lukewarm water
-100 g of honey
-100g of butter
-100 g of fresh almonds
-Salt

Preparation / Moroccan cuisine

1. Mix the semolina, flour, salt and baking powder in a bowl or in a mixer. Mix this mixture with lukewarm water by adding the baker’s yeast, diluted in a little lukewarm water. Let stand 1 hour.

2. Just before cooking, stir the dough, heat the frying pan without fat over high heat. Pour a ladle of batter, tilt the pan to spread it evenly and cook only on one side without turning: holes will appear on the surface and it will dry out. Repeat the process until the dough is used up.

3. Mix the butter, honey and almonds. Pour this preparation on each baghrir before tasting.
